Fennel is an unusual looking vegetable, and has a unique sweet flavor. It’s comprised of greenish white bulb, with several green stalks. The whole vegetable is edible and it’s related to the herbs dill, parsley, and coriander.

Fennel will last for around a week in the fridge.
Preparation
Wash well before use and cut off the leaves if you don’t plan on using them. Fennel is edible raw or cooked. Try slicing it into a salad for a fresh, aniseed crunch, or roast it in wedges for a soft, sweet taste.

Fennel has a high Vitamin C content and is a great antioxidant. It’s also a good source of fiber and potassium.
